How To Shape A Seat For Cutting Saddle

Hi everybody

I am new to the forum and am finding alot of good info. I am pretty new to working with leather and building saddles. Cutting seats have a longer flat spot in them and was wondering how they were shaped in a ground seat different from a normal center seat or pocket style seat. Do they leave out a layer piece of the ground seat or just use thinner pieces? Thanks
