How Do I Identify What Leather It Is?

Hi,
I have got given a bag with off-cuts, different colors different thickness.

Some are soft, and some are hard like cardboard.

How do I know what they are? What type of leather?

Some of them I can stitch with a glover's needle, others I have to saddle stitch.

is there a web page that have pictures?
