Knife Edge Is C Shaped

The knife I'm talking about is a japanese utility knife. It has a 4 cm edge that is suppose to be straight. But there is a sight dip in the middle that is 1-2mm, making the left and right of the knife extend further out.

How do i strop/ grind the edge so that it is straight? Also only one edge is a cutting surface does grinding the other edge help the cut?

You best option is a commercial wood chisel sharpening jig like this Veritas Mk II Honing Guide:

Barring a fine tool like that, you can make your own sharpening jig. Far all manner of suggestions for doing that, Google "chisel sharpening jig."

For anyone that has the same problem - uneven knife edge I took the knife and ran the cutting edge on the sharpening stone until the edge was parallel, cut it on the stone at a 45 degree angle to put a secondary bevel and finished it up like a normal blade.
