attaching/covering cantle riser

I am going to be starting on a barrel saddle here pretty soon as soon as the tree comes in the mail. Its the first barrel saddle I have ever built. I was curious if anyone knows how to attach the cantle riser piece to the tree(back piece off of cantle typical of barrel saddles) and cover it, any tips will be helpful. thanks
