Making a Shearling Vest

I’m a novice leather worker - mostly spent my time making smaller goods like wallets, bags, and pouches.

BUT! I want to try to make a vest, specifically like the one below.

There are a few things things I do know but a million I don’t - like how to join shearling panels (I don’t like the puffy seams typically associated with shearling), or how to attach an out leather to the shearling. I have found some patterns to replicate and I know this won’t be perfect; ultimately my goal will be to have a decent vest and a be a little smarter coming out than I was going in.
