Chefs knife roll, what kind of leather?

I was commissioned by a friend who recently became a chef. I agreed to it, already have a design laid out, but I am not sure if my selection would work. I am thinking of a grey Kodiak side, but if i do that, not sure if i should line it with something. looking for suggestions on what leather you would use, and if you line it, with what?

I've made a few tool rolls. Never lined any of them and had no complaints. The key word here is roll. If you are going to line it remember that it still needs to roll up! Less bulk in the material is better.

… maybe line each pocket with kydex to keep the knives from cutting thru...?
