i could be wrong, but it looks like a natural finish, then antiqued,

do your carving, oil, no dye or stain, finish(resolene, or whatever you prefer), antique, finish again.

I agree with Randypants.....it is a natural finish. But, just FYI Clear Lac or Neat Lac will give you the same results without an antique paste.

I also agree with Randypants. Also, some holster makers leave their work out in the sun for a day or two after applying either neatsfoot oil or extra virgin olive oil, before applying a leather finish. Leaving the leather in the sun will darken the leather a little more.
