I looked around here but I am still unsure. I am making holsters out of 8-9 oz and I am wondering what size/type of edger would be the best to use.

By edger, I assume you mean edge beveling tool. These tools are generally sold in several sizes, identified by a number (typically 1 through 6). The smaller the number, the smaller the cut.

For most work in the 8-9 oz. leather I find that a #3 gives good results.

You may want to purchases a couple edgers to start with. The ones that get most use around here are 2 & 3. The others sure do come in handy from time to time.
