I want the the seam to be thinner than the rest.

I see skivers, french bevelers, skiving knives, and head knife. Which of these would be best to shave off the 1/4" I'm looking to do?

It all depends what tools do you have or want to buy and how much are you willing to spend. If you are doing this just this time and who knows how many others then buy a skiving knife and you will get a good result as long as you take small amounts off and keep at it until you are satisfied. If you want a proffesional look and are going to be dining this often buy a skiving machine you can get one from the leather machine co. or just about anywhere else that sell leather machinery there are also manual skiving machines you will get a more precise look with a manual or powered skiving machine. Good luck!

If you are talking about skiving or thinning the fold area, I use a French edger. The skiving machine that Ralph mentioned will do edges well, but not enough reach to do the center fold and would require special presser feet not commonly available.
