I have been playing around with leatherworking for a few months now....made a few small projects, played with some tooling/carving. Having loads of fun! I have a friend who is a chef, and I'd like to make a knife roll for her. What type of leather would be good for this? Regular veg-tan seems a little stiff. You can find a lot of answers just by searching here. Good luck. Just a quick search I've found them using Latigo, and up to 12oz with a canvas lining.
