I am wanting to build a couple head stalls and was wondering what would be the deal thickness of leather to use? and also is their any other reason why people sew 2 layers of thinner leather together instead of a single layer of comparable thickness?

The thickness depends on the width, to some extent. I make mine usually 8-9oz and lined with 5-6 oz latigo. The reason for doubled and stitched is that it makes it strong but still pliable. It also allows for a grain side on the back.
