Left hand priority with Z twist thread

Hi, I have watched "Saddle Stitch in Detail by Armitage Leather" on Youtube.

As I am left handed, I am interested in using Z twist thread and Left handed sewing.

I have some question.

  • In saddle stitch, Does the "left hand priority" mean sewing with left hand?  

If it does...,  would using Z twist thread be a better choice?
