Hi everyone I normally use bridle leather for all my work but the problem I have is its 2mm thick but not as supple as I would like to build a bag so what would be  my choice of leather to build a bag must be supple leather I was thinking cow side 1.5mm but not sure so thought I would put out the question what leather do I use ????

What type of bag are you trying to make?  

That would dictate the type of leather I'd want to use.

I don't remember the leather supplier but they have a sample variety pack can be purchased dirt cheap. See touch and feel the leathers if you have that option.

I just made one with garment or upholstery leather and it's too soft. If you want to make a tote, use something with some stiffness to it. I use 4-5 oz. veg tan and it is not too heavy but still keeps its shape.

You could use 4-5 veg tan or latigo, both would give to body/shape. You could also use lighter leather and use a bag stiffener and line it.
