Tarbashh Report post Posted December 26, 2014 I'm getting ready to start using a round knife for cutting pieces. I've watched a lot of videos on sharpening/care for one, but none of them addressed whether you can use one of those pull through sharpeners. With the coarse and fine sides. camano ridge Report post Posted December 26, 2014 Most of those style are fixed degree and may not be the same degree as your knife was ground to. Also it will put a secdary bevel on your blade. DavidL Report post Posted December 26, 2014 there are a few jigs that can set the angles for you like the wicked edge. I don't know if they work well with the round knife though. You can go as low budget as sandpaper in several grits or one thats popular are dmt diamond stones that sharpen faster than other options. knife people will use several stones or 2 stones at minimum, one medium another fine and a strop w/ green compound. texback Report post Posted December 27, 2014 I use the Lansky 5 stone set to sharpen all my knives. They can be picked up on Ebay for a reasonable price. It uses a "jig" to set the angles....17 degree being the flattest. Afterwards I strop with green and white compound. Takes a couple of hours to sharpen and strop and works well on round knives. terrymac Report post Posted December 27, 2014 The EZE LAP diamond stone set works great. Just remember you have to set the clamp on one side and sharpen the opposite, both sides. When you go finish this side, then move clamp to the other side. The clamp has a 15 degree option that will get a round knife scary sharp.
