Hello all.  I'm new to the site & forum. Thanks for accepting.  I've been reading and seeing a lot of crafters on various media sites talking about lifting. Can someone explain this technique please.  I have to admit the work is beautiful & has my ears perked.

If you are talking about lifting in the carving sense look up using a petal lifter. George Hurst from Tandy has a nice little video on YouTube.

It's a way of cutting into the flesh and lifting it away from the surface to add depth to the piece.

This is an example of lifting.  The areas where the leaf looks like its coming off the leather are done by separating the leather using a lifter.  In this case a pro lifter by Ed  Labarre.
