Patrice Report post Posted September 13, 2007 (edited) Talking about steak, i have an idea! Why don't we share some recipe we like and that is easy and fast to prepare? I'll give you one that i like! It's pizza made with pesto and prosciutto (italian ham) You will need: 1 pizza crust (home made or from the grocery) Pesto (home made or from the grocery) Sun dried tomatoes 8-10 slices of prosciutto ham torn or cut in small pieces Feta chesse cut in small cube or finelly shred mozarella. Lay the pizza crust in a pan and spread the pesto all over it. Then, cut proscuitto into small pieces and lay them over the pesto. Put sun dried tomatoes over ham and finally throw feta cheese or mozarella on top. Put the pizza in the oven and bake accordingly to direction on the bag of the pizza crust. You can serve the pizza with a green salad with a dressing made with olive oil, basalmic vinegar and Provence Herbs (or any dry spices available). You can also serve red wine. Try the californian red wine, Fish eye (yep, that's the name of the wine). Bon appétit! Edited September 13, 2007 by Patrice

Dragons Pearl Report post Posted September 13, 2007 Ok, have to add mine 1 skinless, boneless chicken breast (the kind in the bags that are seasoned are great for this) 1/2 medium/small onion chopped 1 small frying pan 2 leaves off and iceberg lettuce head Cook the chicken in olive almost all the way and then cut it into cubes and add the onion. Keep cooking till the onions go translucent and the chicken is done. Or add the onions later if you like them a little crunchy. Shred the lettuce leaves and put the chicken over. No need for dressing at all and its very low carb! Makes a great diabetic dinner if you want low/no carbs for dinner.
CitizenKate Report post Posted September 15, 2007 That sounds great, Patrice! Here's mine: Potato Brunch In a large, non-stick skillet, heat - 3 Tbs. olive oil over medium-high heat. When the skillet is up to heat, add - 1 28 oz. bag frozen Potatoes O'Brien - 1 cup frozen 3 pepper onion blend and cook, stirring occasionally, until all the potatoes and vegetables are lightly browned, about 10 minutes. Add to the skillet - ½ cup bacon bits or pieces (the “real†ones are way better!) And cook, stirring occasionally, for another 5 minutes, or until all ingredients are thoroughly cooked. Serve portions of the mixture topped with any of the following: - ¼ cup grated cheddar cheese (optional) - Salsa to taste (optional) - Tabasco Sauce to taste (optional) Also great served with toast, fruit, juice, and other breakfast favorites. This is a Saturday morning favorite of mine!
Mike Phelps Report post Posted October 7, 2007 Bacon Wrapped Green Chilies stuffed with Chicken. Marinate chicken breast in your favorite marinade, I usually use lemon juice, overnite or at least 4 hours. Cut into strips. How big or long depends on the size of the Chilies, or large jalapeños. Slice open the peppers and scrape out seeds. Insert chicken. At this point you can also add a slice of cheese, when I add cheese it is Monterrey Jack. Wrap with thick, the thicker the better, bacon. Don't spare the bacon, it will keep the pepper from burning while they cook. Coat liberally with cracked pepper or at least salad grind pepper. Grill or oven cook for 15-20 minutes. Do Not, I repeat do not, eat these while drinking a fine Mexican beer[is there any other kind]. Doing so will cause you to eat all of them yourself, drinking too much beer and taking a siesta in the lawn chair beside the grill and you won't get anything done until Sunday Night Football.
