Every chef I ever knew had a fortune tied up in his knives and took very good care of them; they went to work when he went to work and they went home with him/her at the end of every day. Anyone working in a commercial kitchen quickly learns that just touching the chef's knives can result in having your heart and entrails deposited on the kitchen floor. Seriously, we are looking at a real business opportunity here. When a chef invests several hundred, or a few thousand, dollars in his professional tools, that chef will not resist spending a reasonable amount of money to provide a safe and secure method of transporting his tools to and from work every day.
