Recently, I found this knife for cheap at an estate sale: https://imgur.com/a/dktTmFO

I would like to make a sheath for it. However, I am not sure how to do so. The designs I have seen in the past fold along a flat edge, but neither the top nor bottom edge of this knife are flat.

How would I go about constructing a sheath for a knife like this?

Just do a 2 piece sheath with a front and back panel and a welt running all the way around. And it can be whatever shape you need.

You would make a sheath for that knife about the same way you would make a sheath for any knife.  Trace the shape and go from there.  The blade would follow the shape of the channel inside the sheath.

How would you go about making the welt curve properly? I don't have much experience with welting.

There are different methods to fit the welt; 1-cut it out the shape you need. 2-wet form it. 3-Cut out darts (small triangle pieces) to allow the sharp angles to bend.

Tandy has a series of books on making knife sheaths.  Vol II outlines a process for making a sheath with a top and bottom, with a welt.  I've found the first two an invaluable asset and great source of knowledge.
