Recreating the vest is not that hard cut the stitches. And take it apart use the old pieces as your pattern for the new. Shown is the back and sides, they are pretty much straight forward the back and side old leather is useable for the liner the front will be all new Inside pockets are reusable

Cutting a long strap by hand can be a stressful event. I see you used a straight edge and weights while you are out and about the town keep your eye out for a 8” C - clamp. You can use it to secure the straight edge to the table top. No more worries about the weight moving
