I'd use the extra strands as a core for a few inches on both sides of the flat. I think it would be better to use it as core for the whole length but that may make it thicker than you want?

As I recall the turkshead that servers as the base for the pinapple or gaucho is sometimes called a casa or home knot. This is because you first tie it and then tie an interweaved knot to make a new fancier knot. Robert Wooley explains the different type of PK in his book "Braiding Rawhide Horse Tack" http://www.ubraidit.com/supplies-detail.php?item=33 I understand Tom Hall goes into great detail on this but I don't have any of his books. Off the top of my head a Type one is the standard PK where the interweave stays inside the casa/base knot. Type two the interweave extends outside the casa on one side (top when I do it). Type three the interweave extends outside the casa on both sides (top and bottom). I can tie type 1 and 2 no problem but mostly need instructions to keep from getting lost with type 3. I like the type 2 if I need a knot to close up tighter on one end. The part that extends beyond the casa helps it close up smaller in my experience.

Long pineapple with an interweave. More or less the same as a nose button on a bosal. One that long I'd use the multiple string method but it can be done with one long string too. I think the fat around the kidney is nice and white and that is what you want. I'd say mostly be sure to stay away from the yellowish stuff and it should work.

Paracord is great stuff, but I like my mecates made from twisted mane hair. I think gutted/non-gutted is going to come down to what you like better. The core no core somewhat the same deal although a core would help if you were trying to do a 5/8" or bigger.

The main braid is 12 strand Trenza Patria of 1/16 string. This time I started 2 6 strand round into the Trenza Patria, then back to 2 6 strands into 12 strand round for just a bit, covered with a pineapple.

See, once the pattern gets in your head it gets easier each time and making a different size button doesn't require new instructions because you can see what you need to do. I personally don't care much for tape as a foundation. I generally use another knot typically with strings through the body of the object (they don't slide then). I have used florist tape some though and shave it to shape. I have also used the epoxy putty. Don't know what kind of tape you are using but the florist stuff adds a little bit of weight as it is fairly dense. You could switch to rawhide instead of roo, it tends to be heavier on it's own.
