If in short words, in this case (without using leather inserts) the process is as follows: 1. Transfer the contour pattern to the leather (with a stylus or, as I usually do, print the contour with inkjet printer on the film and apply the printed side to the leather). 2. Carving, stamping, modeling with spoon and stylus. 3. Molding (I do not know how correctly I translated the term into English). 4. Coloring with spirit dyes. Recently, I made a small entertaining (non-teaching) video that just shows this steps of the example of the German Shepherd portrait.
