I had heard this from their daughter at the Pendleton leather show in November. I've bought many of their vintage tool through the years. My go-to head knife and my stitching horse that are used almost every day, came from them.
For 2oz and less, I don't consider it 'there'. I don't take 'lining" leather into consideration when constructing a project. It's just 'there', but doesn't really add anything to the thickness.
When I mate up two edges to sew together, I take them down by half. If there is a third piece in there, I take them just a bit further and take the 3rd piece down to about 1/3. It really depends on your leather as to what is 'too far'.
A lot of OLD hardware like that is simply not available anymore. Companies close, get bought out, change with the times, etc. Unless you can find some really old stock, substitution is your best bet.
Yes. I don't use either of them, but that is what they are for. I use these two sizes of linen from Crazy Crow. I

I also have some unwaxed hemp that I dye if I want colors.
I haven't bought this, but it sounds like a fair deal. I have ordered from ZW in the past and have been happy with everything. It would be worth it if someone wanted to get started in belt making. Or dog collars. It's a 'grab bag', and it's up to you whether you want to take a chance.
I would use Neats foot oil, but guess any oil will do. After the dog ate half a jar of mink oil and shat all over the house, I won't have it in the house anymore. And I do mean EVERYWHERE!!!!
